It is finally getting a little cooler in Pensacola, for a couple of days at least. We are always pretty much at the end of our rope with the heat and humidity at this point and treasure a few ‘cooler’ October days. We are very aware that the heat is always lurking around the corner ready to pounce! We spent the weekend outside enjoying the ‘no humidity’ for a few hours. I definitely didn’t want to spend my time inside cooking. I had no plans for meals this weekend which is rare for me. I have meals planned for weeks in advance. I went to my pantry to see what I could pull together. My pantry pulled through with a winner…Easy Ziti…Quick and Easy Ziti…Ziti in a Flash…Minute Ziti…ZIPPY ZITI!
I have been posting a lot of summer veggie recipes. I just can’t stop myself! I take advantage of all this summer fresh goodness around me. I love Caprese Salad and I love roasted veggies. I combined the two and got a blue ribbon winner.
Clearly my family loves food. Our best times are always centered around food. I had a craving for a Krispy Kreme Donut. I told Sir Streusel about this craving and his response was, “Well, let’s go take care of that craving right now.” My little ballerina baby was over visiting and she said, “I’m in!”

Summer means Fried Green Tomatoes. I know some people think tomatoes should only be eaten when they are gorgeous red and ripe, but in my house we eat them green and fried! Oh how I love these little fried medallions of crunchy goodness.

Sir Streusel and I have a little small backyard garden that produces some of the best tomatoes to ever grace your taste buds. I make this dish a lot for the two of us during the summer using those decadent tomatoes. I continue to make it throughout the year using store bought tomatoes, it’s just that good. We enjoy sitting on our porch with toasted french bread that has been slathered in olive oil and garlic then pile it high with this deliciousness. Or we just sit like two pigs, each with a fork, and eat it right off the serving plate. We have no shame.
