Easter is coming! Tradition is rooted in Easter Sunday. Families attend church together to celebrate the Resurrection. After church, families head home to enjoy a beautiful meal together. The finale of the day is the ‘Great Egg Hunt’!
What’s not to love about Mac & Cheese? Creamy sauce, cheese, pasta, cheese, bacon….BACON, cheese, it has everything in it, except chocolate, to make my heart flutter. I actually believe I sometimes see a pan of Mac & Cheese winking at me, saying “Come to me, you know I can make you happy.” I have had a long love affair with this simple dish of comfort and joy. I like to play around with it and amp it up once in awhile. I had quite a bit of cheese in the fridge, imagine that, so Mac & Cheese it was for the night! You can use whatever cheeses you have on hand, have fun with it. I added pecans and bacon, we all know my feelings toward bacon. It blended together in the most perfect of ways.
Let the season begin! I love these next few weeks. Decorations, lights, shopping, cooking, baking and counting the hours until every single one of my punks are home for Christmas day!! You may hear this a lot over the next few weeks. I haven’t had all of my punks home at the same time for 2 years. I said 2 YEARS!!!! I am counting the hours until I have them all under one roof. Good times are in my future for sure. I am sharing a side dish with you that my family really enjoys. We enjoy all things fresh and smothered in cheese. My punks definitely inherited my love of cheese. It is topped with panko crumbs to give it that special crunch. Try it before the holidays and then be sure to add it to your menu. You will love it!! If you love flavor, you will love this dish. Your husband will love this dish. Your children will love this dish. They will love you for preparing this dish for them. In other words, make this dish. There is nothing better, or more comforting, than a lightly battered fried pork chop that melts in your mouth. I think my sweet Mama gave me fried pork chops when I was in my crib. I think I may have even used the bone for a pacifier….maybe. Anyway, back to the recipe. I topped the chops with a relish, a black-eyed pea relish! It will knock your socks off. It might knock other things off, but I would rather not know about that. Seriously, the relish just takes the delicious chops to entirely different level. Quick and easy to get on table.
