It is finally getting a little cooler in Pensacola, for a couple of days at least. We are always pretty much at the end of our rope with the heat and humidity at this point and treasure a few ‘cooler’ October days. We are very aware that the heat is always lurking around the corner ready to pounce! We spent the weekend outside enjoying the ‘no humidity’ for a few hours. I definitely didn’t want to spend my time inside cooking. I had no plans for meals this weekend which is rare for me. I have meals planned for weeks in advance. I went to my pantry to see what I could pull together. My pantry pulled through with a winner…Easy Ziti…Quick and Easy Ziti…Ziti in a Flash…Minute Ziti…ZIPPY ZITI!
Saturday was this hunk’s birthday.
I have a serious crush on him. We just celebrated our 35th anniversary and my birthday, and now we get to celebrate his special day. I rejoice daily that I was made just for him. He treats me like a Queen, seriously, he does. He lives his life to make mine a better one. He is always respectful, kind, sweet, (so sweet), and funny. The man makes me laugh, all the time. I asked him what he wanted for his Birthday meal and he didn’t even stop to think. He responded quickly, “Baby love, all I want is your Chicken Potpie, roasted veggies, and Blackberry Cobbler.” Well, when that man calls me ‘Baby Love’, I swoon and will cook whatever his heart desires.
This was his special request Birthday meal. Continue reading Chicken Potpie
This past weekend was my birthday. I LOVE my birthday! I never complain about my age, I am so grateful that the Lord blessed me with another year of great health. Thirty-five years ago, I married a really cute guy on my birthday. He was a great birthday present. We have been blessed with a great life, great punks (our kids), and great little dogs (the girls). Now let me be the first to say that these thirty-five years haven’t been one big party, there have been ups and downs, but I wouldn’t have it any other way. My favorite part of our marriage is our laughter. Hey, life it way too short to spend it angry and trying to find fault with someone. If you aren’t laughing, there is something wrong.
Our wedding day and my birthday, thirty-five years ago. Yep, I was rocking the hair and Eric was working the white tux for all it was worth..cough, cough..John Travolta…Saturday Night fever. Continue reading A Birthday, An Anniversary and Smothered Chicken
Why do I love this meal:
- It is completely from scratch.
- It is easy.
- It doesn’t contain “Cream of Something” soup
- It is easy.
- It has cream cheese.
- It can be prepared with Rotisserie Chicken.
- It was the Birthday meal everyone of my punks asked for during their growing up years. Therefore, this Mama tears up every time she prepares it. FYI: they still love it.
- It is easy.
