If you have been reading my blog for a while, it is no secret that I love Saturday morning breakfast. It is my favorite meal to prepare. Everything on Saturday morning moves in a slower pace in our home. I can take my time doing prep work and we definitely take our time eating the meal. It’s that ‘easy morning feeling’ that I love so much. This Strata is a perfect Saturday morning meal.
Well, let me start this post off by saying my shoulder is so much better!!! I love my cortisone shots. I start rehab in a week. I am going to do everything possible to not have rotator cuff surgery. Thank you so much for the Facebook, texts, and email well wishes. It actually hurt to type last week.
Easter was wonderful in our home. It was also Eric’s birthday. I am sharing some of his Birthday/Easter meal with you today. He deserves only the best. I could have fed him corn dogs and potato chips and he would have been happy.
I can whip out cupcakes pretty quickly and with confidence that they will look pretty good. However, I am NOT a cake decorator. Cakes are a challenge for me. This cake was definitely a labor of love for my birthday boy.
This is the season where we are taking a dish with us every time we walk out the door. I am normally asked to bring a cake, or cupcakes, or cookies, or a pie, or a cobbler, or whatever else has sugar in it. My peeps know I LOVE to bake. However, there are times I need to take a side dish and this is one of my favorites. It has a crunchy cheese/Panko topping that makes everyone swoon.
My back has been bothering me for months. I told you on the previous post that I was finally on muscle relaxers. Can we just have a moment of silence to praise the muscle relaxer? Today I experienced my very first “Deep Tissue Massage.” This massage is not a ‘whirly bird feel good’ experience. This is a hang on, grit your teeth and power through it experience. My masseuse was wonderful! She backed off when I grunted but kept the pressure strong and steady. I also learned it is a pinched nerve in my neck that is the culprit. I feel better since the massage. I could also be feeling better because I treated myself to a cupcake for being such a brave girl during the massage and let us not forget…..muscle relaxers! I should be back to my old tricks soon.
Things have been wild in Pensacola, fun, but wild and busy. I like it that way. I am not one to sit my days away watching tv or sleeping. Now if I were to be truthful, I could waste some hours watching Dancing With The Stars or the Real Housewives of any city. Ask me about any housewife in any city and I can tell you everything you ever wanted to know about her. Eric tells me that is not something I really want to brag about but hey, those Housewives make me feel soooooo much better about my group of “Real Housewives of Pensacola”! First things first, I baked my sweet Mama a cupcake cake for Mother’s Day. It was her favorite bouquet of flowers ever.
Don’t you love one pan dinners? Just put everything on a sheet pan, shove it in the oven, pull it out a little later and….dinner! I don’t know of anyone that doesn’t like roasted chicken. I had some chicken thighs in the freezer and potatoes in the pantry. It was pretty obvious what I was going to put in front of Sir Streusel for dinner. I whisked up some dressing to toss the chicken and potatoes with to make it even more spectacular. Threw some rosemary, my favorite herb, on the pan and shoved that baby in the oven. 40 minutes later, Sir Streusel was grunting and licking his fingers. WIN!! I love meals I can throw in a pot, walk away, dance a little bit to Tom Jones, play with my girls, paint my nails, groove a little bit more to Tommy, walk back to my stove, and dinner is done. That is living!!!
This meal requires very little prep time (insert happy face) and just layering the ingredients in a big ‘ole pot. The pork chops and potatoes soak up the cider so that every single bite is full of flavor. Love it! So go get your chops, get your groovin’ jam playin’, grab a big ‘ole pot, and start layerin’.
