I am sharing with you today Pork Chops that have been marinated and then either put on the grill or on a stove top in a grill pan. Summertime means summer veggies! Roasted squash in a cast iron skillet with feta and jalapenos, well, simply put….mind blowing!!!
Well, let me start this post off by saying my shoulder is so much better!!! I love my cortisone shots. I start rehab in a week. I am going to do everything possible to not have rotator cuff surgery. Thank you so much for the Facebook, texts, and email well wishes. It actually hurt to type last week.
Easter was wonderful in our home. It was also Eric’s birthday. I am sharing some of his Birthday/Easter meal with you today. He deserves only the best. I could have fed him corn dogs and potato chips and he would have been happy.
I can whip out cupcakes pretty quickly and with confidence that they will look pretty good. However, I am NOT a cake decorator. Cakes are a challenge for me. This cake was definitely a labor of love for my birthday boy.
I opened my freezer and these lovelies were screaming to come out and play. I made a very simple sweet and spicy rub, cooked them for a very short time on the stove top, and finished them in the oven. There were five boneless chops in the package. After our meal, there were no chops left. I ate one. Apparently Sir Streusel liked them a lot!
I love meals I can throw in a pot, walk away, dance a little bit to Tom Jones, play with my girls, paint my nails, groove a little bit more to Tommy, walk back to my stove, and dinner is done. That is living!!!
This meal requires very little prep time (insert happy face) and just layering the ingredients in a big ‘ole pot. The pork chops and potatoes soak up the cider so that every single bite is full of flavor. Love it! So go get your chops, get your groovin’ jam playin’, grab a big ‘ole pot, and start layerin’.

If you love flavor, you will love this dish. Your husband will love this dish. Your children will love this dish. They will love you for preparing this dish for them. In other words, make this dish. There is nothing better, or more comforting, than a lightly battered fried pork chop that melts in your mouth. I think my sweet Mama gave me fried pork chops when I was in my crib. I think I may have even used the bone for a pacifier….maybe. Anyway, back to the recipe. I topped the chops with a relish, a black-eyed pea relish! It will knock your socks off. It might knock other things off, but I would rather not know about that. Seriously, the relish just takes the delicious chops to entirely different level. Quick and easy to get on table.
