Loaded Cornbread

I had the unexpected opportunity to visit my Raleigh Punks a few days back.  I consider it a great year if I get to see them three times a year.  Guess what?  I got a bonus visit!  It was a really great time of spending a few days with them.  It was a visit full of really great food!  I had been reading about a restaurant for several years that is listed a ‘must-eat’ restaurant in Raleigh.  I told my boys and my daughter-in-law that I didn’t care what we did except we HAD to eat at “Beasley’s Chicken and Honey”.  

Get there early folks.  The line wraps around the block. 

Beasley’s is comfort food served with sophistication.  Everything is kicked up a notch.  The only way to eat the fried chicken is with your eyes closed savoring every….single….bite because it will be over all too soon.  The food is juicy, fluffy, crispy, gorgeous, and everything I want in life.

Chicken and Biscuit, Quiche, Chicken and Gravy, and the star of the morning…..CHICKEN AND WAFFLES!  I can’t say enough about how much we enjoyed Beasley’s.  If you are ever in Raleigh, run to the little corner downtown and get ‘yo self some chicken! Continue reading Loaded Cornbread

Anytime Strata

If you have been reading my blog for a while, it is no secret that I love Saturday morning breakfast.  It is my favorite meal to prepare.  Everything on Saturday morning moves in a slower pace in our home.  I can take my time doing prep work and we definitely take our time eating the meal.  It’s that ‘easy morning feeling’ that I love so much.  This Strata is a perfect Saturday morning meal.

Chicken Stew

It’s been two weeks of emotions all over the map to say the least.  First and most importantly, let me share my Valentine present from my Sir Streusel.  This was my happy point in the past two weeks.  He had texted me the sweetest text earlier in the day and you can see my sweet response right back to my Valentine.

Are we the sweetest?!  Well, let me share with you the diamonds I received.

And just like that love was blooming in our home!  

Hey, do I have a romantic guy or what?!  I love how we tease each other.  If we do nothing else, we laugh…we laugh a lot. We don’t take ourselves too seriously.  Life is too short.  I loved my Valentine gift.  I showed it off with pride.  He knew exactly how much I would love lying in bed, eating my Pecan Log and watching any of the Housewives’s on Bravo.  I can’t wait until next Valentine’s day. Pepper Steak

This is hands down one of Sir Streusel’s favorite meals.  The star of the dish is steak…red meat…beef…caveman food…his love.  I don’t eat red meat so anytime I cook it for him, I can literally hear him ‘grunting’.  I can also hear him saying between grunts, “Thank you, thank you, this is so good, I can’t get enough of it, what did you bake for dessert?”  The steak is cooked in garlic, onion, wine and worcestershire sauce and then surrounded by peppers while it finishes baking.  Sir Streusel tells me the flavor and tenderness is to die for, well, maybe to ‘grunt’ for.  Let’s don’t die over this dish ok?  I couldn’t take it!!  The recipe is from Martha Foose.  She is the ultimate guru of Southern cooking.  She did all the cooking for the movie “The Help”.  If you saw the movie, you will remember the food.  That movie had me craving fried chicken for days.  Prepare this dish and get it on your table.  You are sure to hear some grunts.  Trust me, that is a good thing.
