Baby it’s been cold outside! It has been a breath of fresh air and we were given the gift of no humidity for a few days. Oh my life is GOOD! Cold weather means coats and gloves, blankets and fuzzy socks, sweat pants and sweat shirts, but most importantly it means soup!! Cold weather and soup go hand in hand. This Tortellini soup is one of our favorites.
I saw wonderful examples of humanity and kindness during the Olympics. Many times I witnessed a veteran athlete consoling a rookie athlete when the grasp of an Olympic medal was no longer in reach. But my favorite moment of simple humanity and kindness was during the Women’s 5000 meter race. USA’S Abbey DiAgostino and New Zealand’s Nikki Hamblin collided and fell on the track with both athlete’s suffering injuries . When Nikki stopped and helped Abbey up, I knew from that one single act of kindness the heart of Nikki Hamblin. I could see the pain on Nikki’s face from her own injuries as she helped her opponent to her feet. It refreshed my heart to watch that moment. There is so much ugly right now everywhere around us. It is out of control ugly. I want to see more kindness. I want to see more respect. I want to see more Nikki Hamblin’s rise up and show character, respect and kindness. I am so thankful I witnessed that moment live, as it happened. It brought tears to my eyes and a smile to my face
The colder temperatures finally made their way to Florida for two days! During Christmas, we had three weeks straight of hot, humid, muggy, wet, damp, hot, wet, muggy, jungle, wet, damp weather. It was like July in Christmas. Finally the sun broke through and colder temperatures were here for two days, two days people!! Colder temperatures mean a pot of soup needs to be simmering on the stove top. I love Chicken Noodle soup but don’t always enjoy making the noodles. I had some cheese tortellini in the freezer, along with rotisserie chicken and knew I could have of pot of Chicken Tortellini Soup simmering in no time. Sir Streusel became a lifetime fan. He told me the Tortellini made the soup more “meaty”. Who says you need to have noodles to have a pot of Chicken Noodle Soup?!
What’s not to love about Mac & Cheese? Creamy sauce, cheese, pasta, cheese, bacon….BACON, cheese, it has everything in it, except chocolate, to make my heart flutter. I actually believe I sometimes see a pan of Mac & Cheese winking at me, saying “Come to me, you know I can make you happy.” I have had a long love affair with this simple dish of comfort and joy. I like to play around with it and amp it up once in awhile. I had quite a bit of cheese in the fridge, imagine that, so Mac & Cheese it was for the night! You can use whatever cheeses you have on hand, have fun with it. I added pecans and bacon, we all know my feelings toward bacon. It blended together in the most perfect of ways.
Last week, I had one of my punks home for Thanksgiving. He is the oldest by five minutes. He makes a great only child. He never complains, goes with the flow, helps in the kitchen, is better in the kitchen than I am, and even cleans up the kitchen! I tried to convince him to move back home and actually move back into his old bedroom, but he didn’t think that would be a good idea. Imagine that! I prepared this Chicken Cordon Bleu Pasta for his first night at home. He texted me for the recipe and I told him it was going to be on the blog. So apparently, this dish is a pleaser. One thing I forgot to do was add the Panko Crumbs on top. I was so excited when he walked through the door that I just shoved the dish into the oven. Add the Panko, don’t be like me. It gives it just a little texture and crunch. Oh we still ate the pasta, we weren’t going to let a little absence of Panko crumbs stop us from cramming our face full of this creamy wonderful bit of happiness. In our home, we like flavor, lots of flavor. We also like Mexican food, lots of Mexican food. I love cheese, all cheese all the time. Although this isn’t a Native Mexican dish, it has that Mexican flavor that we love. This dish has pasta, chicken, flavor, cheese, and crunchy tortilla chips. I mean, what else could you want people?! Sir Streusel never knows what type of dish I am going to place in front of him. He rarely gets the same thing twice. He has told me he feels as if he is eating in a restaurant every night and is ordering the daily special. I took it as a compliment and shoved his plate in front of him. Well, this plate was a winner. Score one for dear Edna! It comes together fast with basic ingredients. Prepare this for your family. Tell them it’s the daily special. Then shove their plates in front of them. I promise, they will smile!
