Enchiladas Verde

I don’t cook Mexican food often.  When I do, my kitchen looks like it has been run over by a semi-truck.  But oh my, it is worth every bit of messiness I created!  Everytime I make Enchiladas, Eric says, “I don’t know why we ever go out for Mexican food.  The best enchiladas in town are made in your kitchen.”

We have a little Mexican restaurant we really enjoy.  We go there a lot, as in they know our names.  The bonus is they have outside dining so we can take the girls.

Score one for dear Edna!  It comes together fast with basic ingredients.  Prepare this for your family.  Tell them it’s the daily special.  Then shove their plates in front of them.  I promise, they will smile!
