Is there anything better than biting into a fresh strawberry? When our punks were little, every year Eric would take them to pick strawberries. Our little Paige would eat as many as she picked right from the ground. She had juice running out of the corners of her little mouth. One day as they were picking berries, she picked one that was covered in dirt and was so excited when she showed her daddy her berry. Her words exactly, “Look daddy, it already has sugar on it!”
I have rounded up my favorite summer desserts using the deliciousness of the summer fruits that are available right now. It is time to get the cobblers baking and the trifles in the fridge!
Is there anything better than a fresh fruit salad on a hot summer day? No, I don’t think there is. The cool, crisp sweetness of the fruit will hit the spot everytime. This salad is our favorite fruit salad. It has that Pina Colada taste and feel to it. You can never go wrong with anything flavored Pina Colada.
The weather is gorgeous, Florida humidity is at a rare low, the grass is turning green, everything is coming together for me to sit outside and enjoy this beautiful spring. Except, for me to truly enjoy this weather, I mean truly enjoy all it has to offer…..I will need a snack. Girlfriend loves her snacks!
Remember the Frozen Fruit Salad your Grandma used to make and you could eat like a popsicle? I had forgotten all about this little treat until I came across the recipe in my old index card file box full of recipes. This my friends is the perfect little snack to enjoy while sitting on your porch reading your favorite book. Continue reading Frozen Fruit Salad
The past couple of weeks I have found some amazing Florida strawberries in my grocery store. It’s early for strawberries but these were AMAZING! As I was snacking on them during my car ride home, I got a vision of muffins, lots and lots of muffins.
I have been seeing this pie float around the web…a lot. The more I saw it, the more my mouth watered.
So, a few months ago I hurt my back. Don’t know when, where or how, but I hurt it. I don’t bend, twist, or jump like a used to…..it sucks. Being a former gymnast, dancer and cheerleader, I am used to telling my body what to do, when to do it, and how to look when doing it. Well not anymore. Yep kids, those were the good ‘ol days. The days when Mama could do any movement she wanted. Now all I have to do is open the refrigerator door wrong and I throw something out of whack. The plus side to this is that I finally couldn’t live with the pain any longer and went and got myself some…..Muscle Relaxers! Oh my, now everything is beautiful in my world. No pain, no bad words, just beauty. Everyone and everything is just so beautiful this morning.
Well, I survived the three birthday’s of my punks last week. By surviving, I mean not being with any of them. I will never get use to that, never. I still need to be baking whatever their little heart’s desires and singing “Happy Birthday” to them all….day….long…..they have dreaded memories of my singing. They all assured me that they wanted to be with me and wanted something that Mama baked. Well, at least that is what they said and that is what I choose to believe. Since I couldn’t bake the desire of their heart, I baked the desire of Sir Streusel’s heart, cobbler. This has to be hands down the easiest cobbler EVER! The blackberries come out of Edna, my beloved oven, in the most wonderful, delicious syrupy goodness. The topping is a buttery crunch that is perfect for the blackberries. It is the perfect ratio of crunch and blackberry gooeyness (Is that a word?).
February is here….the LOVE month! I love baking ‘LOVE’ food. Everything gets turned into little hearts and covered in sprinkles, oh my I love sprinkles! It’s also the month that our food is red: Valentine red, heart red, flushed face red, just plain old red. Let’s see if this cobbler meets all the requirements for a Valentine dessert: it’s red–check, it’s sweet–check, it’s delicious–check, it’s sweet–check, it’s so easy it’s embarrassing–check. The entire list was checked off for a perfect quick Valentine Dessert. My Valentine happens to love fruit desserts so I know this will show up for sure on our Sweetheart table. Of course I will have to make myself something that involves chocolate. Continue reading Cherry Cobbler
