It is finally getting a little cooler in Pensacola, for a couple of days at least. We are always pretty much at the end of our rope with the heat and humidity at this point and treasure a few ‘cooler’ October days. We are very aware that the heat is always lurking around the corner ready to pounce! We spent the weekend outside enjoying the ‘no humidity’ for a few hours. I definitely didn’t want to spend my time inside cooking. I had no plans for meals this weekend which is rare for me. I have meals planned for weeks in advance. I went to my pantry to see what I could pull together. My pantry pulled through with a winner…Easy Ziti…Quick and Easy Ziti…Ziti in a Flash…Minute Ziti…ZIPPY ZITI!
Why do I love pancakes, oh let me count the ways!
- They are fun!
- They are for everyone!
- They are for breakfast!
- They are for dinner!
- They are cute!
- They have a holiday named after them, “National Pancake Day”.
- They are easy to make!
- They can be made into a cake!!!
I love anything that is slow cooked. I love that I can get our meal going in the morning, get done what I need to get done during the day and our dinner is being perfectly prepared. I just don’t think a cook can have too many recipes that don’t keep them tied to the stove or oven. I am here to add one more to your recipe box….Spicy Pulled Pork. It has a kick, a good kick.
Sir Streusel travels every week and rarely has time to enjoy the city he is working. This past week he had a free night and he found this beautiful jewel…….
This man knows me like a book. This teacup brought such a big smile to my face. Although I LOVE this cup, it was the fact that he had a rare free night and he chose to spend it shopping for me a new teacup. I wish you could see this cup in person. It is just exquisite. Sir Streusel told me that he must have looked at 100 teacups before he decided on this one.
I love the flowers inside the cup as well as the gold trim. He knows I love gold trimmed teacups, he is a rare breed that actually listens. I know I gush a lot about Sir Streusel, but he is worthy of gushing!
What a glorious weekend we had in the panhandle. It was picture perfect. The girls, Stella and Paloma, were begging for a puppachinno. My order was: Pumpkin Spice Latte, Vanilla Bean Frappachinno and two Pumpkin Spice Puppachinnos. Yes, our girls are coffee snobs. They know what they want, they know how they want it, and they know exactly how to attack their puppachinno. Observe…….

So, this happened Tuesday.
Sir Streusel had his widdle knee repaired. The day before, he threw his back out, like, really threw his back out. If it was graded he would get an A+. The major drugs he was on when we left the hospital made him forget all about his back pain.
We got home and then this happened.
Baby Stella whined until I picked her up so she could lay in Daddy’s lap. She knew he didn’t feel well and cried until she got to him. She is such a sweet little girl. She only weighs 4 lbs. so I knew she wouldn’t cause him any pain. Plus, he was on happy pills. I mean the “Happy Happy Pills”!
The first morning after surgery was a bit of a challenge. Lot of swelling, lot of pain and the major drugs had worn off so he could feel his back pain. Poor guy. I crushed happy pills into his breakfast….#iaintnofool
Now we go through PT and he will be better than new.
I saw wonderful examples of humanity and kindness during the Olympics. Many times I witnessed a veteran athlete consoling a rookie athlete when the grasp of an Olympic medal was no longer in reach. But my favorite moment of simple humanity and kindness was during the Women’s 5000 meter race. USA’S Abbey DiAgostino and New Zealand’s Nikki Hamblin collided and fell on the track with both athlete’s suffering injuries . When Nikki stopped and helped Abbey up, I knew from that one single act of kindness the heart of Nikki Hamblin. I could see the pain on Nikki’s face from her own injuries as she helped her opponent to her feet. It refreshed my heart to watch that moment. There is so much ugly right now everywhere around us. It is out of control ugly. I want to see more kindness. I want to see more respect. I want to see more Nikki Hamblin’s rise up and show character, respect and kindness. I am so thankful I witnessed that moment live, as it happened. It brought tears to my eyes and a smile to my face
I love my little girls. They have no idea they are dogs, I have no intentions of telling them any time soon, if ever.
This past weekend was my birthday. I LOVE my birthday! I never complain about my age, I am so grateful that the Lord blessed me with another year of great health. Thirty-five years ago, I married a really cute guy on my birthday. He was a great birthday present. We have been blessed with a great life, great punks (our kids), and great little dogs (the girls). Now let me be the first to say that these thirty-five years haven’t been one big party, there have been ups and downs, but I wouldn’t have it any other way. My favorite part of our marriage is our laughter. Hey, life it way too short to spend it angry and trying to find fault with someone. If you aren’t laughing, there is something wrong.
