Well, it is officially fall. In Pensacola, we are still hitting 90 degrees with over the top humidity. We wear shorts and flip flops all year long. As I matter of fact, I wore a pair of flip flops to church Sunday. They were sparkly flip flops, but flip flops non the less. You can buy a bathing year round in our stores. You can find water floats, sunscreen, coolers, and anything you want with a flamingo on it. As much as I love my Florida life, I need a little fall! I need to pretend that there are pretty fall leaves on the ground. I need to wear boots and a sweater. I want a fire in the fireplace. So instead of having these wonderful fall transitions actually happen, I light an apple caramel candle, make myself a pumpkin spice latte and get a pot of soup simmering on the stove!
I want to thank you for all the wonderful words of encouragement during my Mother-in-Law’s journey into Memory Care. So many of us have walked this path or we are in the process of walking the journey. It helps to share what we have learned with others. I read every response, text, comment, and email. Thank you from my heart.
Today I am sharing with you my Spinach Lasagne. So good. I mean, really, so good! It has a secret weapon baked in…..black beans! Oh baby those black beans make it mouth watering good.
I have shared with you before how much my crew loves appetizers. When I have all of my punks home, appetizers are in full swing. This is one of our favs. Creamy barbecue sauce, black beans, corn, cheeses, and sour cream all come together in the most delicious way. Plan on having a lot, I mean a lot, of chips because they won’t stop dipping until it is all gone!
This month, the ‘Love Month’, has definitely been a month of trials. My family has had attacks coming at them right, left, up, down, and inside out. We are still in the fire but I know we will walk out of this. More about this when we come out Victorious!
Because of the ‘fire’, blogging has been almost non-existent this month. I have missed it. I love cooking, baking, creating, playing with my food. I finally cooked Sir Streusel a meal, I do believe it was the first one in two weeks. I just haven’t had the energy to cook and Edna has had my back. She knows me, she gets me. It is one of the many reasons I love her. Sir Streusel loves black beans and I love chicken and cheese. This meal comes together so quickly and it is comfort food at its best. I think it goes without saying that I needed some comfort! If you feel like you need to have arms around you saying, “There now sweet girl, this will pass”, run to your kitchen and prepare this meal!!!
