I felt so good to be back in my kitchen this weekend with my beloved oven, Edna. I missed her and she missed me! I wanted to treat Sir Streusel to his favorite Bread Pudding, but with a twist. You can find his favorite Bread Pudding here. I wanted to add a little chocolate to it, for me!
These past few weeks have been hit or miss on preparing meals in our home. I was spending virtually every waking moment with Viv. When I did get home to prepare a meal, it had to quick and easy or get the crockpot going first thing in the morning. If you have never tried Crockpot Lasagne, get you crock pot out now!
This past weekend we celebrated the homecoming of my 93 year old Mother-in-Law. She was two weeks shy of turning 94. Eric and I were with her when she drew her last breath on earth and stepped immediately into the presence of our Lord. Eric looked at me and smiled and said, “She is with Jesus.”
Yea, that’s why I have a fear of pressure cooking. Last week, both of my boys called me telling me I HAVE to get an Instant Pot. I replied, “No I don’t. Those things are dangerous and I want to live!” After much coaxing, they assured me the “Instant Pot” was safe and foolproof. Today is all about the blueberry! Blueberries are Sir Streusel’s favorite summer fruit. Strawberries run a close second, but I believe the blueberry wins being his favorite by a nose. I am sharing a few of his very favorite blueberry recipes that I bake for him so that you can use up all those blueberries you have picked this summer. I am nice that way!
Is there anything better than biting into a fresh strawberry? When our punks were little, every year Eric would take them to pick strawberries. Our little Paige would eat as many as she picked right from the ground. She had juice running out of the corners of her little mouth. One day as they were picking berries, she picked one that was covered in dirt and was so excited when she showed her daddy her berry. Her words exactly, “Look daddy, it already has sugar on it!”
I have been posting a lot of summer veggie recipes. I just can’t stop myself! I take advantage of all this summer fresh goodness around me. I love Caprese Salad and I love roasted veggies. I combined the two and got a blue ribbon winner.
I am sharing with you today Pork Chops that have been marinated and then either put on the grill or on a stove top in a grill pan. Summertime means summer veggies! Roasted squash in a cast iron skillet with feta and jalapenos, well, simply put….mind blowing!!!
Growing up, Sweet Mama always had a “pot of something” simmering on the stove. I think I got to the point where I didn’t even notice it, it was just always there. A pot of greens, peas, beans, etc., would be simmering on the stove. I couldn’t wait for her to put a bowl of whatever had been simmering in front of me with a piece of cornbread. Now that was good eating!
