Well, let me start this post off by saying my shoulder is so much better!!! I love my cortisone shots. I start rehab in a week. I am going to do everything possible to not have rotator cuff surgery. Thank you so much for the Facebook, texts, and email well wishes. It actually hurt to type last week.
Easter was wonderful in our home. It was also Eric’s birthday. I am sharing some of his Birthday/Easter meal with you today. He deserves only the best. I could have fed him corn dogs and potato chips and he would have been happy.
I can whip out cupcakes pretty quickly and with confidence that they will look pretty good. However, I am NOT a cake decorator. Cakes are a challenge for me. This cake was definitely a labor of love for my birthday boy.
Easter is coming! Tradition is rooted in Easter Sunday. Families attend church together to celebrate the Resurrection. After church, families head home to enjoy a beautiful meal together. The finale of the day is the ‘Great Egg Hunt’!
Spring has my mind thinking of nothing but crisp, fresh salads that are covered in wonderful vinaigrettes. I am a vinaigrette girl. I have never been one for heavy dressings. A light drizzle of flavor is all I want. I want to taste everything I have tossed together in my salad. I was so pleased with this Cranberry Vinaigrette. It is perfect to toss on top of salad of greens, pepper, apples, shaved Parmesan, and nuts.
Ok people, the holidays are over. I hated to see it end. I was in such a funk taking down the decorations. All good things must come to an end, even the delicious holiday food. By Christmas day, I had all the feels of Christmas food indulging. I looked something like this…..
This is the season where we are taking a dish with us every time we walk out the door. I am normally asked to bring a cake, or cupcakes, or cookies, or a pie, or a cobbler, or whatever else has sugar in it. My peeps know I LOVE to bake. However, there are times I need to take a side dish and this is one of my favorites. It has a crunchy cheese/Panko topping that makes everyone swoon.
My back has been bothering me for months. I told you on the previous post that I was finally on muscle relaxers. Can we just have a moment of silence to praise the muscle relaxer? Today I experienced my very first “Deep Tissue Massage.” This massage is not a ‘whirly bird feel good’ experience. This is a hang on, grit your teeth and power through it experience. My masseuse was wonderful! She backed off when I grunted but kept the pressure strong and steady. I also learned it is a pinched nerve in my neck that is the culprit. I feel better since the massage. I could also be feeling better because I treated myself to a cupcake for being such a brave girl during the massage and let us not forget…..muscle relaxers! I should be back to my old tricks soon.
Thinking of a side dish can be tough some days. Why is that? You would think that thinking of the main dish would be hard but nooooo, for me….it’s the sides. The side dish rounds out the meal, gives us our veggie total for the day. I always want to fry up some bacon and place it on a pretty plate and hope no one notices that it is, well, you know…..bacon. During the summer I head to my little garden and pull some cucumber and peppers and throw in a little onion.
Summer means Fried Green Tomatoes. I know some people think tomatoes should only be eaten when they are gorgeous red and ripe, but in my house we eat them green and fried! Oh how I love these little fried medallions of crunchy goodness.

Things have been wild in Pensacola, fun, but wild and busy. I like it that way. I am not one to sit my days away watching tv or sleeping. Now if I were to be truthful, I could waste some hours watching Dancing With The Stars or the Real Housewives of any city. Ask me about any housewife in any city and I can tell you everything you ever wanted to know about her. Eric tells me that is not something I really want to brag about but hey, those Housewives make me feel soooooo much better about my group of “Real Housewives of Pensacola”! First things first, I baked my sweet Mama a cupcake cake for Mother’s Day. It was her favorite bouquet of flowers ever.
