I had the unexpected opportunity to visit my Raleigh Punks a few days back. I consider it a great year if I get to see them three times a year. Guess what? I got a bonus visit! It was a really great time of spending a few days with them. It was a visit full of really great food! I had been reading about a restaurant for several years that is listed a ‘must-eat’ restaurant in Raleigh. I told my boys and my daughter-in-law that I didn’t care what we did except we HAD to eat at “Beasley’s Chicken and Honey”.
Get there early folks. The line wraps around the block.
Beasley’s is comfort food served with sophistication. Everything is kicked up a notch. The only way to eat the fried chicken is with your eyes closed savoring every….single….bite because it will be over all too soon. The food is juicy, fluffy, crispy, gorgeous, and everything I want in life.
Chicken and Biscuit, Quiche, Chicken and Gravy, and the star of the morning…..CHICKEN AND WAFFLES! I can’t say enough about how much we enjoyed Beasley’s. If you are ever in Raleigh, run to the little corner downtown and get ‘yo self some chicken! Continue reading Loaded Cornbread→
It has been a hot mess in our home for a few weeks. Carpet installed, blinds installed, and a new refrigerator……..all in one day!!! It was a long process, moving all the furniture from the bedrooms, emptying all the closets, taking all the shelving our of closets and living like vagabonds until it came in. Carpet arrived and it was flawed, had to wait another four weeks. Blinds came in, every window was wrong except for my kitchen bay window. The refrigerator, well, it took over two months to make its appearance but he was worth the wait! Edna has a baby brother. Meet Earl!!!!
I have been posting a lot of summer veggie recipes. I just can’t stop myself! I take advantage of all this summer fresh goodness around me. I love Caprese Salad and I love roasted veggies. I combined the two and got a blue ribbon winner.
I am sharing with you today Pork Chops that have been marinated and then either put on the grill or on a stove top in a grill pan. Summertime means summer veggies! Roasted squash in a cast iron skillet with feta and jalapenos, well, simply put….mind blowing!!!
Growing up, Sweet Mama always had a “pot of something” simmering on the stove. I think I got to the point where I didn’t even notice it, it was just always there. A pot of greens, peas, beans, etc., would be simmering on the stove. I couldn’t wait for her to put a bowl of whatever had been simmering in front of me with a piece of cornbread. Now that was good eating!
Clearly my family loves food. Our best times are always centered around food. I had a craving for a Krispy Kreme Donut. I told Sir Streusel about this craving and his response was, “Well, let’s go take care of that craving right now.” My little ballerina baby was over visiting and she said, “I’m in!”

The sun is shining and the humidity is low, it’s a beautiful day in the neighborhood! We had rain for 2 1/2 weeks straight. Everything was wet, everything was droopy, everything was dirty, everything had mushrooms growing out it….everything. When Tropical Storm Cindy rolled through, we headed to the beach to walk out on the pier and watch the waves, it’s tradition. There is just something so majestic watching those waves roll in. I wish you could actually tell how large these waves were.
Eric’s favorite side salad is a Greek Salad. I thought I would take the classic Greek Salad to the next level.
Is there anything better than a fresh fruit salad on a hot summer day? No, I don’t think there is. The cool, crisp sweetness of the fruit will hit the spot everytime. This salad is our favorite fruit salad. It has that Pina Colada taste and feel to it. You can never go wrong with anything flavored Pina Colada.
I felt like I wanted a salad. I felt like I wanted chicken. I felt like I wanted everything covered in delicious balsamic vinaigrette. So I got in the kitchen and got busy. Sometimes you just have to make things happen for yourself.
The weather is gorgeous, Florida humidity is at a rare low, the grass is turning green, everything is coming together for me to sit outside and enjoy this beautiful spring. Except, for me to truly enjoy this weather, I mean truly enjoy all it has to offer…..I will need a snack. Girlfriend loves her snacks!

I had forgotten all about this little treat until I came across the recipe in my old index card file box full of recipes.
