I am sharing with you a little twist on an old classic. I need you to imagine Chicken Pot Pie right out of the oven, steaming hot, being served on your table. Now imagine Chicken Pot Pie with green apples cooked into it and topped with cheddar dumplings. That got you smiling didn’t it?!
Chicken Noodle Soup. Just say it. Just say, “Chicken Noodle Soup”. Did you feel the calm sweep over you? Did you feel like you were just wrapped in a snuggly blanket? Did you just feel your blood pressure lower 20 points? That my friends is the power of Chicken Noodle Soup.
I believe I have been cooking this chowder since I was a new bride. I have worked and tweaked it through the years and it has become a hands down Sheaffer family favorite. I can remember dropping my little punks off at school and telling them I would have Chicken Corn Chowder ready for them when they returned home. I would get the sweetest smiles returned to me with a big, “Thanks Mommy”! Oh be still my heart, I miss those little punks. I may go a couple of years without making this chowder, but when I do, we remember just how much we love it.
I made this for Sir Streusel and me this past weekend and I got a sweet smile from him as well. That smile makes my heart skip a beat!
Last week was a challenge, a big challenge. Sir Streusel was recovering from his knee surgery and a pulled back muscle. Yours truly had a bacterial infection that required 12 pills a day for 10 days. Each pill was a combination of many antibiotics. Needless to say, I was on a ”MEGADOSE”! I became so sick from those dang pills. I don’t remember feeling that badly for years. As my sweet Mama said, “If Jody is in bed, she is sick.” The good news is Sir Streusel is up and walking, slowly, and I have completed the MEGADOSE!
I am not exaggerating when I say that this is what we felt like…….walking zombies!
I have had so much fun watching the Olympics this past week. If you know me at all, you know I live for the Olympic Women’s Gymnastic Competitions. I don’t talk, I don’t accept phone calls, I don’t cook, I just breathe the Women’s Gymnastics. Well, I have had a ball!!
We have a team of BEASTS…..
They dominated by EIGHT points! That is unheard of. These tiny BEASTS brought home the Gold.
I am not ashamed to say that I cried when they won, I cried during the National Anthem, I cried watching them wave to their fans and family, I was a mess. It was a great day for Team USA!
Lately, I have been having a tropical vibe. We live on a gorgeous beach with turquoise water, sugar white sand and gentle breeze. Every weekend as I am floating in my chair trying to beat the heat, I envision myself as a beautiful hula dancer.
But something deep down inside me tells me that this is what people would really see if I broke out into my hula dance…….
But really, who would you rather spend some tropical time with? The gorgeous, serene beauty or the wild woman just not having a care in the world and dancing her heart out?! Yea, I thought so, I would be so much fun as a hula girl.
I love enchiladas, love them. I love pasta. Combine the two and I am one happy girl. I had a craving for enchiladas but didn’t want to go through the whole process of making them. Mainly because I didn’t want to clean up the mess required to make enchiladas. I did have a box of jumbo shells in the pantry and I can make any meal with those babies.
Today I have another Crock-pot, or Slow Cooker, recipe for you. Every year, Sir Streusel and I rent a lake house in the Georgia Mountains and do nothing, seriously, nothing. Eric fishes from sun up until sun down. We don’t even go out to eat except for one night. I take the Crock-pot and of course my cast iron skillet and do easy meals for us. It is all about slowing down, resting and refreshing. Pulled Barbecue Chicken Sandwiches is on the menu every year.
