Well, it is officially fall. In Pensacola, we are still hitting 90 degrees with over the top humidity. We wear shorts and flip flops all year long. As I matter of fact, I wore a pair of flip flops to church Sunday. They were sparkly flip flops, but flip flops non the less. You can buy a bathing year round in our stores. You can find water floats, sunscreen, coolers, and anything you want with a flamingo on it. As much as I love my Florida life, I need a little fall! I need to pretend that there are pretty fall leaves on the ground. I need to wear boots and a sweater. I want a fire in the fireplace. So instead of having these wonderful fall transitions actually happen, I light an apple caramel candle, make myself a pumpkin spice latte and get a pot of soup simmering on the stove!
I don’t cook Mexican food often. When I do, my kitchen looks like it has been run over by a semi-truck. But oh my, it is worth every bit of messiness I created! Everytime I make Enchiladas, Eric says, “I don’t know why we ever go out for Mexican food. The best enchiladas in town are made in your kitchen.”
The sun is shining and the humidity is low, it’s a beautiful day in the neighborhood! We had rain for 2 1/2 weeks straight. Everything was wet, everything was droopy, everything was dirty, everything had mushrooms growing out it….everything. When Tropical Storm Cindy rolled through, we headed to the beach to walk out on the pier and watch the waves, it’s tradition. There is just something so majestic watching those waves roll in. I wish you could actually tell how large these waves were.
Eric’s favorite side salad is a Greek Salad. I thought I would take the classic Greek Salad to the next level.
I felt like I wanted a salad. I felt like I wanted chicken. I felt like I wanted everything covered in delicious balsamic vinaigrette. So I got in the kitchen and got busy. Sometimes you just have to make things happen for yourself.
Here is a meal for you that is low carb, low fat, and best of all, cooked in the slow cooker! It involves three ingredients: chicken, lime vinaigrette and chipotle peppers.
I love pasta, it is my downfall for sure. I can never say no to a plate of pasta. My favorite pasta is penne. There is just something about those little tubes of carbs that make me do cartwheels! I have noticed lately that when I do a cartwheel I now see ‘stars’! I need to make a mental note to find another move to do when I get excited. Wait, I better write that down because I don’t remember my mental notes anymore. Wait, where is my pen??? Shoot, what I was I going to write down?! Help!!!!!!
This dish combines chicken, pasta, broccoli, red pepper, onion, garlic, mozzarella cheese, Parmesan cheese, and feta cheese. Yea, yea, you love me, I know.
Remember Dinner on the Ground that the country churches held on the last Sunday of the month? Boy, I do! Great food, fellowship and all you could eat! Well, Sir Streusel and I had our own little Dinner on the Ground this past weekend….by accident. I prepared a meal straight off of Betty Crocker’s website. It sounded so good, mouth watering delicious. I pulled the baking dish out of Edna, my beloved oven, and set it on my little table by the window to take pictures to share with you. I’ll just let this next picture speak for itself…….
It’s been two weeks of emotions all over the map to say the least. First and most importantly, let me share my Valentine present from my Sir Streusel. This was my happy point in the past two weeks. He had texted me the sweetest text earlier in the day and you can see my sweet response right back to my Valentine.

Hey, do I have a romantic guy or what?! I love how we tease each other. If we do nothing else, we laugh…we laugh a lot. We don’t take ourselves too seriously. Life is too short. I loved my Valentine gift. I showed it off with pride. He knew exactly how much I would love lying in bed, eating my Pecan Log and watching any of the Housewives’s on Bravo.
