Eggnog, people either love it or hate it.  I love it!  I wait for it to arrive in the grocery store like I do for Pumpkin Spice in the fall.  So far this holiday season, I have baked two Eggnog Cakes, Eggnog Cupcakes, and two different batches of eggnog cookies. Loaded Cornbread

I had the unexpected opportunity to visit my Raleigh Punks a few days back.  I consider it a great year if I get to see them three times a year.  Guess what?  I got a bonus visit!  It was a really great time of spending a few days with them.  It was a visit full of really great food!  I had been reading about a restaurant for several years that is listed a ‘must-eat’ restaurant in Raleigh.  I told my boys and my daughter-in-law that I didn’t care what we did except we HAD to eat at “Beasley’s Chicken and Honey”.  

Get there early folks.  The line wraps around the block. 

Beasley’s is comfort food served with sophistication.  Everything is kicked up a notch.  The only way to eat the fried chicken is with your eyes closed savoring every….single….bite because it will be over all too soon.  The food is juicy, fluffy, crispy, gorgeous, and everything I want in life.

Chicken and Biscuit, Quiche, Chicken and Gravy, and the star of the morning…..CHICKEN AND WAFFLES!  I can’t say enough about how much we enjoyed Beasley’s.  If you are ever in Raleigh, run to the little corner downtown and get ‘yo self some chicken! Continue reading Loaded Cornbread

Good Morning Muffins

I like to keep muffins in the freezer for Eric to pack in his suitcase for breakfast when he travels, which is every week.  Sometimes he just likes to have a cup of coffee and a muffin in his room before he heads out for the day.  I played around with this muffin for a while before I nailed it.

Succotash and Cheese Grits

It has been a hot mess in our home for a few weeks.  Carpet installed, blinds installed, and a new refrigerator……..all in one day!!!  It was a long process, moving all the furniture from the bedrooms, emptying all the closets, taking all the shelving our of closets and living like vagabonds until it came in.  Carpet arrived and it was flawed, had to wait another four weeks.  Blinds came in, every window was wrong except for my kitchen bay window.  The refrigerator, well, it took over two months to make its appearance but he was worth the wait!  Edna has a baby brother.  Meet Earl!!!!

Zippy Ziti

It is finally getting a little cooler in Pensacola, for a couple of days at least.  We are always pretty much at the end of our rope with the heat and humidity at this point and treasure a few ‘cooler’ October days.  We are very aware that the heat is always lurking around the corner ready to pounce!  We spent the weekend outside enjoying the ‘no humidity’ for a few hours.  I definitely didn’t want to spend my time inside cooking.  I had no plans for meals this weekend which is rare for me.  I have meals planned for weeks in advance.  I went to my pantry to see what I could pull together.  My pantry pulled through with a winner…Easy Ziti…Quick and Easy Ziti…Ziti in a Flash…Minute Ziti…ZIPPY ZITI!

Anytime Strata

If you have been reading my blog for a while, it is no secret that I love Saturday morning breakfast.  It is my favorite meal to prepare.  Everything on Saturday morning moves in a slower pace in our home.  I can take my time doing prep work and we definitely take our time eating the meal.  It’s that ‘easy morning feeling’ that I love so much.  This Strata is a perfect Saturday morning meal.

Black Bean, Chicken and Corn Soup

Well, it is officially fall.  In Pensacola, we are still hitting 90 degrees with over the top humidity.  We wear shorts and flip flops all year long.  As I matter of fact, I wore a pair of flip flops to church Sunday.  They were sparkly flip flops, but flip flops non the less.  You can buy a bathing year round in our stores.  You can find water floats, sunscreen, coolers, and anything you want with a flamingo on it.  As much as I love my Florida life, I need a little fall!  I need to pretend that there are pretty fall leaves on the ground.  I need to wear boots and a sweater.  I want a fire in the fireplace.  So instead of having these wonderful fall transitions actually happen, I light an apple caramel candle, make myself a pumpkin spice latte and get a pot of soup simmering on the stove!

Pumpkin Mini Cakes

All you have to do is step inside any store and you will immediately find that it is Pumpkin Spice season everywhere!  Now don’t get me wrong, I am a full blow Pumpkin Spice Latte addict.  I get one almost, almost, everyday.  My day revolves around  getting my Pumpkin Spice fix.  But, Pumpkin Spice cough drops….uhm….not today….not ever.

Enchiladas Verde

I don’t cook Mexican food often.  When I do, my kitchen looks like it has been run over by a semi-truck.  But oh my, it is worth every bit of messiness I created!  Everytime I make Enchiladas, Eric says, “I don’t know why we ever go out for Mexican food.  The best enchiladas in town are made in your kitchen.”
