Our Favorite Fruit Salad and…….MILKSHAKES!

Is there anything better than a fresh fruit salad on a hot summer day?  No, I don’t think there is.  The cool, crisp sweetness of the fruit will hit the spot everytime.  This salad is our favorite fruit salad.  It has that Pina Colada taste and feel to it.  You can never go wrong with anything flavored Pina Colada.

Before we get to the fruit salad, let’s talk milkshakes.  About an hour from our home, a new milkshake joint opened.  This place is serious about their milkshakes.  These shakes are works of art.  I called my ballerina baby and I told her I would be by to pick her up in one hour, we were going to get a milkshake.

You can design your own shake or choose one of the ‘favorites’ on the menu. Plan on having lots of time to choose your delight.

Baby girl chose the Cinnamon Roll Smores, she never looked back. She just closed her eyes and enjoyed every bite. Of course I chose the Caramel/Chocolate concoction, The Sea Turtle. It was EVERYTHING. It was LIFE. It was the worth the one hour drive to “The Yard.”

This sums up our milkshake day…….

Now let’s get back to our favorite Fruit Salad.  It’s so easy to pull together.  In a large bowl, mix fresh green and red grapes, fresh blueberries, fresh strawberries, and canned pineapple chunks.  Whisk together frozen non-alcoholic pina colada mix, sugar, prineapple-orange juice, and almond and coconut extracts.  Pour the mix over the fruit and chill.  That’s it!

I normally don’t use all of the pina colada/sugar mix.  I start with a small amount and then continue adding until I get it where I want.

This is great for your Fourth of July menu that is right around the corner.  Cool, refreshing, and sweet.  For those that don’t want cake….I shudder at the thought….this is a perfect dessert option.

Pina Colada Fruit Salad
  1. 2 cups green grapes
  2. 2 cups seedless red grapes
  3. 2 cups blueberries
  4. 2 cups halved fresh strawberries
  5. 1 (8 oz.) can pineapple chunks, drained
  6. 1 (10 oz.) frozen non-alcoholic Pina colada mix, thawed
  7. ½ cup sugar
  8. ½ cup pineapple-orange juice
  9. 1/8 teaspoon almond extract
  10. 1/8 teaspoon coconut extract
  1. In a large bowl, combine the first five ingredients.
  2. In a small bowl, whisk the Pina colada mix, sugar, juice and extracts until sugar is dissolved.
  3. Pour over fruit.
  4. Toss to coat.
  5. Chill until serving.
