Strawberry Spinach Salad with Poppyseed Dressing

It’s strawberry season y’all!!  Happy, happy, happy!  Is there anything prettier than a flat full of strawberries?  No, I don’t think so.

 I am sharing with you a salad that is big on flavor using the bounty of fresh strawberries.  This salad is perfect for weeknight meals, Mother’s Day or Easter.  

The star of this salad is the vinaigrette dressing.  Sweet with just enough tart to bring out every bit of flavor from those gorgeous strawberries.  Once you gather the ingredients, pour everything into a jar and shake, shake hard, shake so hard your hips shake!  That counts as exercise right?!  Your welcome.

Combine oil, sugar, vinegar, balasmic vinegar, lemon juice, poppy seed, salt and chopped onion.  The chopped onion is optional but if you want the full experience, the full explosion of flavor…..include the onion!

This jar may not look like much but trust me, it is GOLD! I could win first prize at the county fair with this dressing.

I mixed spinach, romaine lettuce, sliced strawberries, chopped walnuts, and shaved parmesan cheese for the salad.  Drizzled the vinaigrette over the salad, toss to eat.

Put this on you Mother’s Day menu, your Easter menu, your just because you want something beautiful and delicious menu.  I haven’t found anyone that hasn’t fallen in love with this dressing.  Make use of the strawberry season and treat yourself to a beautiful salad with the most amazing dressing to ever touch your lips!

Strawberry Salad with Poppyseed Dressing
  1. 2/3 cup oil
  2. 2/3 cup sugar
  3. ¼ cup cider vinegar
  4. 2 tablespoons balsamic vinegar
  5. ¼ cup lemon juice
  6. 3 tablespoons poppy seeds
  7. 1 teaspoon salt
  8. ¼ cup chopped onion
  1. Combine ingredients in a small jar and mix/shake well.
  2. Drizzle dressing over salad.
