Cherry Cake Bars

I introduced my Sweet Mama to Snapchat.  I created a monster.

Now I am just going to throw this next one out there on the table for ya.

I can’t stop looking at this picture. It’s hypnotizing. It’s mesmerizing. It’s my SWEET MAMA!!! YIKES!

Her crowning moment was the video we did.  This was a complete spur of the moment, off the cuff, first take.  She is a pro!

Now the scene stealer isn’t Sweet Mama, as cute as she is, it’s Big Daddy completely ignoring us just walking around, minding his own business in the background. #heaintgotnouseforsnapchat

I made these Cherry Cake Bars and they are perfect for Valentine’s Day.  They are part cake, part pie, and part bars.  In other words, they will meet every need of your Valentine.

Let’s get this party started!

Preheat oven to 350 degrees.  Prepare a 9 x 13-inch pan.

In a medium bowl, whisk together the flour and salt, set aside.  In a large bowl, use a hand mixer to beat the butter and sugar until they are light and fluffy.  Beat in eggs, one at a time.  Add the extracts.  Reduce the mixer speed to low and add dry ingredients, ½ cup at a time. Mix until combined.

Reserve 1 ½ cups of batter.

Spread remaining batter evenly into prepared baking dish.

Top with cherry pie filling, spreading evenly.

This is coming together exactly as I had envisioned.

Drop spoonfuls of reserved batter over the top.

 

Bake 30-35 minutes or until inserted toothpick comes out clean.

Cool completely on a wire rack.

We are almost done.  It’s just missing a simple glaze drizzled on top.

Whisk sifted powdered sugar with extracts and enough milk to reach desired consistency.

I just want to face plant myself directly into this pan of goodness.

These bars can be kept in a container overnight but they are definitely better, as well as their best, eaten on the same day as they were prepared.  I have a feeling that won’t be a problem for your Valentine.

Ingredients
  1. 3 cups all-purpose flour
  2. ½ teaspoon salt
  3. 1 cup softened butter
  4. 2 cups sugar
  5. 4 eggs
  6. 1 teaspoon vanilla extract
  7. ¼ teaspoon almond extract
  8. 1 (21 ounce) can cherry pie filling
Glaze
  1. 1 cup sifted powdered sugar
  2. ½ teaspoon vanilla extract
  3. ½ teaspoon almond extract
  4. 1 tablespoon milk

  10. Top with cherry pie filling, spreading evenly.
  11. Drop spoonfuls of reserved batter over the top.
  12. Bake 30-35 minutes or until inserted toothpick comes out clean.
  13. Cool completely on a wire rack.
Glaze
  1. Whisk sifted powdered sugar with extracts and enough milk to reach desired consistency.
  2. Pour into resealable bag and cut a very small tip from one corner. (or use a piping bag)
  3. Drizzle over cooled bars.
  4. Chill before cutting for best results.
