Hawaiian Chicken Nachos

There is a little football game coming up, I believe it is called the “Super Bowl”.  It’s not a big deal, just a little game very few people watch.  In my opinion, there are three things that are important to the success of this game; food, commercials, and the half-time show.  The food is the essential component to the success of this game.  It must be good, it must be able to be picked up with your fingers, and it must be worthy of being finger licking good.  I look forward to getting in the kitchen and preparing appetizers for the sole purpose of eating them in front of the television.  The bonus is licking my fingers in public.

These nachos fill all the requirements of this little football game.

These are the ingredients you will need to make these finger licking babies.

Shred chicken.

Chop onion and red bell pepper.

 

Grate the cheese.

“Zing” went the strings of my heart!

Drain pineapple and reserve liquid.

Marinate diced pepper and onion in 1/2 reserved pineapple liquid.

Combine chicken, barbecue sauce, cilantro, Pina Colada mix and remaining reserved pineapple juice. Warm the mixture in a small saucepan over low heat.

Spread a single layer of tortilla chips onto an oven-proof baking dish.

I used a lot more chips than this. I stopped to take a picture and then finished loading the plate. #dontbestingywiththechips

Layer half the chicken mixture on the chips, then sprinkle with cheese. 

Sprinkle with marinated pepper and onion.

Repeat layers to make a second tier.

Bake 5 minutes or until the cheese is melted.

Now this would be mouth watering, finger licking good at this point but we are going to kick it up a notch.

Remove from the oven and drizzle with teriyaki cooking sauce.

Sprinkle pineapple on the nachos and serve.

Now my dears, they are worthy of being finger lickin’ good…..in public!

Put these nachos on your Super Bowl Party food list.  I don’t want you to forget them.  I would never forgive you if you did.  Well, I would, but it would take a while and we don’t want to waste any time being friends!

  1. 1 ½ cups rotisserie chicken
  2. ¾ cup barbecue sauce
  3. 2 Tbs. fresh cilantro, chopped
  4. ½ cup canned pineapple tidbits
  5. ½ cup Pina Colada mix
  6. 6 cups corn tortilla chips
  7. ½ cup red bell pepper, diced
  8. ¼ cup red onion, diced
  9. 1 cup Monterey Jack cheese, shredded (or cheese of your preference)
  10. 3 Tbs. teriyaki cooking sauce
Instructions
  1. Preheat oven to 400F
  2. Drain pineapple and reserve liquid.
  3. Marinate diced pepper and onion in 1/2 reserved pineapple liquid.
  4. Combine chicken, barbecue sauce, cilantro, Pina Colada mix and remaining reserved pineapple juice. Warm the mixture in a small saucepan over low heat.
  5. Spread a single layer of tortilla chips onto an oven-proof baking dish.
  6. Layer half the chicken mixture on the chips, then sprinkle with cheese.
  7. Sprinkle with marinated pepper and onion and repeat to build a second layer.
  8. Bake 5 minutes or until the cheese is melted.
  9. Remove from the oven and drizzle with teriyaki cooking sauce. Sprinkle pineapple on the nachos and serve.
