Pumpkin Blondies

You have heard me talk about The FOLD, our Sunday School class, many times.  I love each and every one of them.  But the real reason I love my class is this…..

Sir Streusel always brings a lesson that has something each and everyone of us can take something away from and apply it to our lives.  He just makes getting up at 5:30am on Sunday morning a little easier for me.

Let’s talk Blondies.  Let’s talk Pumpkin Blondies.  Let’s talk Pumpkin Blondies with Cream Cheese Frosting!  Now we’re talking baby!!

I made the batter and literally could not stop tasting it.  I asked Sir Streusel to taste it and he simply looked at me and said “WOW”!!  After they are baked and frosted, I would describe them as “WOWZA”!!!

Let’s get started so you can start yelling “WOWZA”!

Preheat oven to 350 degrees.  In a large bowl, cream butter and brown sugar until light and fluffy.  Beat in eggs, one at a time, corn syrup and extract.

In a second bowl, combine flour, pumpkin pie spice, nutmeg, baking powder and salt.  Gradually beat flour mixture into creamed mixture.  Add baking chips and pecans(optional) to mixture.  Mix until everything is combined.

Spread into a greased 8” square baking pan.  Bake for 25-35 minutes. (or until toothpick inserted into middle of pan comes out clean)  Cool completely.

Time to make the Cream Cheese Frosting. 

Place room temperature butter, cream cheese, and vanilla into mixer and blend for 4-5 minutes.  Turn mixer speed on low and add confectioner sugar, one cup at a time.  When all sugar is added, increase mixer speed and mix until light, fluffy and creamy.

6This is a perfect fall dessert.  Pumpkin spice with white chocolate and pecans can never be a wrong thing.  The Cream Cheese Frosting is well, it’s just you know…… to DIE FOR!!!

Make these, bake these, eat these, enjoy these bars and start yelling WOWZA!!!

  1. ¾ cup softened butter
  2. ¾ cup packed brown sugar
  3. 2 large eggs
  4. 4 teaspoons light corn syrup
  5. 1 ½ teaspoons rum extract
  6. 1 1/3 cups all-purpose flour’
  7. 2 ½ pumpkin pie spice
  8. ½ teaspoon nutmeg
  9. ½ teaspoon salt
  10. 1 cup white baking chips
  11. ¾ cup chopped pecans (optional)
Frosting
  1. 1 8 oz. package cream cheese—room temperature
  2. 1 stick butter—room temperature
  3. 4 cups confectioner sugar
  4. 1 teaspoon vanilla extract
Directions for Blondies
