Game Day Chicken Sliders

Fall means pumpkin spice and football!  Football means food, game day food, finger food and sandwiches.  I got you covered on your next game day menu.

Barbecue Chicken Sliders…….

Barbecue shredded chicken, jalapenos, Monterrey Jack cheese, pineapple, butter and Worcestershire sauce are the perfect game day Slider Sammies.

I used Hawaiian Sweet Rolls for the bun.  I normally have to buy two packs as I can eat an entire pack by myself.  Slice the rolls in half, horizontally, and place the bottoms in a 13 x 9 pan.

Cook and shred 1 ½ lbs. boneless, skinless chicken breasts (or use rotisserie chicken)

In a medium bowl combine chicken, pineapple, barbecue sauce and jalapeno.  **may omit jalapeno if you don’t want the heat

This mixture would be great in a tortilla roll-up sandwich or served on top of rice.

Spoon meat mixture onto roll bottoms.

Top mixture with Monterrey Jack Cheese.

Aaaahhhhh…….there’s the stuff, the good stuff.

Top sandwich with roll top.

In a small bowl combine, melted butter, honey, Worcestershire sauce and black pepper.

Pour butter mixture over top of rolls.

**Just a little side note.  I filled in the sides and middle of baking pan with leftover chicken filling.  I didn’t want to waste a drop.

Bake, covered, at 350 degrees for 15 minutes.  Remove foil and bake an additional 15 minutes.

21These will disappear the minute you set them on the table.  As a matter of fact, you might want to prepare a second round for half time!

Meat Filling
  1. 1 ½ lbs. boneless, shredded chicken breasts (can use rotisserie chicken)
  2. 1 8-oz. can pineapple tidbits, drained
  3. 2/3 cup of barbecue sauce
  4. ¼ cup diced jalapeno (fresh or pickled)
  5. 2 cups shredded Monterey Jack Cheese
Topping
  1. 6 tablespoons melted butter
  2. 2 tablespoons honey
  3. 1 tablespoon Worcestershire sauce
  4. 1 teaspoon black pepper
Instructions
