Cheesy Chicken Pasta

My Ballerina came home this past weekend.  It was for just a little more than 24 hours but I had her home.  We packed in some serious shopping during those few hours, I mean, we did some damage!

I will take whatever time I can get with this little beauty.  If truth be told, she should still be four years old with her beloved baby doll, “Baby Sarah”, and her trusted blankie.  

Today I am sharing  Cheesy Chicken Pasta dinner.  Throw everything in a skillet, pour it in a baking dish and then bake it.  That’s it.  Dinner is done and on the table.  Everyone is fed and happy, especially you.  You can go sit, kick your feet up and watch “Dancing with the Stars”.  Wait until you taste this, you are going to LOVE me even more than you do now!

Cook Pasta according to package directions.  You can use anytime type of small tube pasta, I used Penne.  Slice tomatoes in half.  Place in colander and toss with one teaspoon of salt.  Let sit for 30 minutes.  Shake colander to remove moisture.

In a large skillet, heat olive oil over medium heat.  Add seasoning mix and garlic to skillet and cook until soft.  ***you can chop fresh onion, pepper and celery but hey, I had this bag of ready-to-go mix in my freezer begging to come out and play.  Who am I to deny a playdate among my ingredients?!

Add chicken and stir until everything is warm.

Add tomatoes, basil, oregano, pepper, and salt to skillet.  Cook until tomatoes are heated.

Turn heat to medium low.  Stir in cooked pasta and whipping cream. Stir until thickened, about 5 minutes.

Remove from heat.  Pour into prepared baking dish.

Sprinkle with cheese and loosely cover with aluminum foil.  Bake at 350 degrees for 15 minutes, uncover and bake 10 additional minutes or until hot and bubbly and cheese is melted.

Yep, it’s as beautiful as you imagined it would be.  Concerning the amount of cheese on top…..double it.  You can’t go wrong with cheese or bacon or chocolate.  Just sayin’……..

Serve with a salad, bake some cheese bread, and you have dinner.  The pasta and chicken mixed with the fresh tomatoes give a great flavor and wonderful texture.  Sir Streusel and I ate it for two nights.  It warms up great for leftovers!

Ingredients
  1. 5-6 cups sliced cherry tomatoes
  2. 2 teaspoons salt
  3. 3 tablespoons olive oil
  4. 1 bag frozen seasoning mix
  5. 1 tablespoon minced garlic
  6. 1 Rotisserie Chicken, shredded
  7. 1 tablespoon dried basil
  8. 1 tablespoon dried oregano
  9. ¾ box penne pasta (16 oz.)
  10. 1 ½ cups whipping cream
  11. 1 ½ cups shredded Mozzarella Cheese
