Lately, I have been having a tropical vibe. We live on a gorgeous beach with turquoise water, sugar white sand and gentle breeze. Every weekend as I am floating in my chair trying to beat the heat, I envision myself as a beautiful hula dancer.
But something deep down inside me tells me that this is what people would really see if I broke out into my hula dance…….
But really, who would you rather spend some tropical time with? The gorgeous, serene beauty or the wild woman just not having a care in the world and dancing her heart out?! Yea, I thought so, I would be so much fun as a hula girl.
Today I am sharing my tropical vibe in the slow cooker. Can I get an AMEN? It’s hot outside people, give those ovens a break.
Place chicken breast in the slow cooker and cover with barbecue sauce. Add pineapple chunks, diced onion and green pepper.
Cover and cook on HIGH for 2 to 3 hours or LOW for 4 to 6 hours. Shred chicken with two forks and serve as sandwich or over rice.
The chicken, pineapple, onion and barbecue sauce come together in a most delicious way.
Get a notepad, make sure you get this right, because your eyes are going to roll waaaaaaay back in your head. I start layering with bun, Gouda cheese, lettuce, Hawaiian chicken, Gouda cheese, thinly sliced black forest ham, and finished with bun.
The only thing left to do is either eat your plate of Hawaiian Barbecue Chicken over rice or go ALL in like me and put that sammy together.
Now, close your eyes and picture my hula dance.

- 4-6 boneless, skinless chicken breasts
- 1 (16 oz) bottle Barbecue Sauce
- 1 (20 oz) can pineapple chunks, drained
- 1 red onion-diced
- 1 green pepper-diced
- Place chicken breast in a greased slow cooker and cover with barbecue sauce.
- Add pineapple, onion and pepper.
- Cover and cook on HIGH for 2 to 3 hours or LOW for 4 to 6 hours.
- Shred chicken with two forks and return to slow cooker.
- Serve as a sandwich or over rice.
