Rocky Road Brownies

Sir Streusel’s  favorite ice cream is Rocky Road.  In 34 years of marriage, it is the only ice cream I have seen him eat.  I have also watched him eat gallons of it, I mean GALLONS of it and his waistline never changes. If I think about that fact for very long I could get angry so let’s keep moving.  He also loves brownies.  If I have a pan of brownies waiting for him in the evening, I get extra kisses.  So I knew “Rocky Road Brownies” would make him swoon.  I normally bake brownies from scratch, it’s the way Sir Streusel likes them.  But hey, when there is a box in the pantry, by all means use it!  The icing whips up quickly and fluffy.  Not too sweet, just right to top off the decadent brownies.  I baked these in a 9″x9″ pan and they were perfect.  Not one was left after 48 hours…..not one.  Don’t judge.

Beat softened butter at medium speed until fluffy.
Add jar of Marshmallow fluff to butter and beat until fluffy.
After adding the jar of marshmallow fluff to the fluffy butter and beating until fluffy, add the confectioner sugar. Continuing beating until smooth and……fluffy.

Just a side note, I will no longer be using the word ‘fluffy’. I am beginning to have a complex.

I can’t adequately describe the look of bliss on Sir Streusel’s face when he bit into this.  He went to his happy place, his blissful place, his place where I am his favorite baker.  That is my favorite place to be.

Rocky Road Brownies

Brownie
  1. Boxed brownie mix-and ingredients listed on box
  2. 1/2 cup chocolate chunks
  3. 1/2 cup chopped pecans
Marshmallow Fluff Icing
  1. 1 cup butter, room temperature
  2. 1 7oz. jar marshmallow fluff
  3. 2 cups sifted confectioner sugar
  4. 1/2 cup chocolate chunks
  5. 1/2 cup chopped pecans
  6. 1/2 cup mini marshmallows
Directions
Brownies
  1. Prepare brownies as directed on box. Add 1/2 cup of chocolate chips and 1/2 cup of chopped pecans to batter. Bake as directed on box.
Icing
  1. In a large bowl, using hand mixer, beat butter on medium high speed until fluffy.
  2. Add Marshmallow Fluff. Beat until blended.
  3. Gradually beat in 2 cups of sifted confectioner sugar until fluffy.
  4. Spread over cooled brownies.
  5. Top with chocolate chunks, chopped pecans, and marshmallows.
