Boneless Pork Chops with Relish

If you love flavor, you will love this dish.  Your husband will love this dish.  Your children will love this dish.  They will love you for preparing this dish for them.  In other words, make this dish.  There is nothing better, or more comforting, than a lightly battered fried pork chop that melts in your mouth.  I think my sweet Mama gave me fried pork chops when I was in my crib.  I think I may have even used the bone for a pacifier….maybe.  Anyway, back to the recipe.  I topped the chops  with a relish, a black-eyed pea relish!  It will knock your socks off.  It might knock other things off, but I would rather not know about that.  Seriously, the relish just takes the delicious chops to entirely different level.  Quick and easy to get on table.  Prepare this, you have no excuses!

The cast for the chops. Opps, my bad. I left out the cayenne pepper and for whatever reason put table salt in the picture. So, close your eyes, use your imagination and imagine cayenne pepper on the counter instead of table salt. I will assume you survived the debacle I made.

In a shallow dish or bowl, combine flour, seasoned salt, pepper, garlic power, and cayenne pepper to taste.
Heat large skillet with olive oil over medium heat and cook chops 3-5 minutes per side, or until golden brown. Now that is a beautiful sight. Makes my heart flutter.

After you have combined and cooked the first nine ingredients of the relish for 3-4 minutes, add the peas and the plate of beauty. Stir to combine and let everyone makes friends in the saucepan.

Pork Chops
  1. 4- 6 boneless pork chops
  2. 1 cup all-purpose flour (more if needed)
  3. 1 1/2 tablespoons seasoned salt
  4. 1 1/2 teaspoons ground black pepper
  5. 1 teaspoon garlic powder
  6. cayenne pepper to taste
  7. olive oil for frying
Relish
  1. 1/3 cup cider vinegar
  2. 3 tablespoons firmly packed brown sugar
  3. 2 tablespoons olive oil
  4. 2 teaspoons mustard seed
  5. 3/4 teaspoon celery salt
  6. 1 teaspoon salt
  7. 1/2 teaspoon ground black pepper
  8. 1/2 teaspoon cayenne pepper
  9. dash of cumin
  10. 2 (15.8 oz) cans black-eyed peas, rinsed and drained
  11. 1 medium tomato-seeded and chopped
  12. 1 small onion-chopped
  13. 1/2 red bell pepper-seeded and chopped
  14. 1/2 cup celery-chopped
  15. 1/2 cup green onions-chopped
Pork Chops
  1. In a large skillet, heat olive oil over medium heat.
  2. In a shallow dish or bowl, combine flour, salt, pepper, and garlic powder.
  3. Dredge boneless pork chops through flour mixture. Shake off excess flour. Place chops into heated oil. Cook 3-5 minutes per side or until golden brown.
  4. Place chops on paper towel lined plate while preparing relish.
Relish
  1. In a medium saucepan over medium heat, combine vinegar, brown sugar, olive oil, mustard seed, celery salt, salt, black pepper, red pepper and a dash of cumin.
  2. Cook for 3-4 minutes. Make sure brown sugar has dissolved.
  3. Add black-eye peas, tomato, bell pepper, onion, celery, green onion. Stir well to combine all ingredients.
  4. Cook for 3-6 minutes, stirring occasionally.
  5. Serve Relish over pork chops.
